Any one who can help me with the type symbol for a gunnery training ship? I know US Navy used "AG" in connection to such vessels pennant number, but I'm not sure that this is the right symbol

The USN used AG to denote "miscellaneous auxillary", (the G comes from "auxillary general"). There's also AX for training ship, which might also be applicable.

Jane's used AX from training ships, be them specialised or dedicated cadet training ships. If its USN ship, use the proper USN navy title naturally (and so on...)
