sheer is the curve in the deck from bow to stern, yeah. currently your ship is lined like an modern merchant, which is cheaper to build but a lot worse when sailing

much better already, but keep in mind that the lower decks and the midship was also curved, but she doesn't need an curve that much as you have her now. I think, with the ships of that time in mind, your deck highest full deck should be 2-3 pixels higher on the stern and bow then midships

To be perfectly honest, I like the look of her like that. She looks... sleek, a little bit.
Anyway, here's a first go at the rigging. Incomplete, but I want to find out whether i'm on the right track.
Vaguely based on the USS Wampanoag, picture from 1868.

I have a feeling I'm done...
Ships like this have a sheer lack of ancillary details that many more modern ships do. However, as long as the rigging is okay...
She's meant to be a fast packet, whether sailing or steaming. She has an extra mast than most similar ships, which shouldn't interfere with the others. She certainly has less than the 7 masts that some ships have...

ETA: I say all that, but I'm sure I've missed something

the planking (or the panel lines, depending on how she was build) should be curved.
also, the rigging looks very bland, while this is the time of the clippers in which the rigging was actually very complex.
