Has anyone considered doing the refit to the Iowas as mentioned in "The Last War" with VLS replacing the ABLs, 2 extra batteries of Harpoons, VLS ESSM replacing two Twin 5-inch/38 turrets, RAM launchers, and a TAB MPQ-37/FIREFINDER target acquisition radar?

I'm glad the stuff I sent you was helpful, Colosseum. The scheme on the Missouri during her shakedown was also used by two Atlanta-class CLAAs: USS Flint (CL-97), and USS San Juan (CL-54). There's a picture on Wikipedia of the Flint at Ulithi in that scheme.

Any plans to do the New Jersey as she was commissioned, or is that too similar to the Iowa?

Not really, the early units were all fairly similar. I've captured the open bridge type of the early class with Iowa in 1943. This ship covers the late-war enclosed square bridge of Missouri and Wisconsin. Friedman's has a photo of New Jersey before it was given the square bridge with a round bridge (a la the South Dakotas). I'm not sure if there's enough of a difference to really warrant another drawing.

As always, you guys are free to come up with whatever derivatives you'd like.

I believe New Jersey received an SP height-finding radar on her mainmast sometime in 1945.

However I don't think creating entirely new drawings just to show what is basically a minor detail that the average viewer will not notice is worth our time.
