As requested, here is Bilbao in here post 2003 livery. I got the colour for the anti fouling paint from a picture of her in dry dock in Falmouth.

A hypothetical question... Would something like this be able to be converted to a hospital ship or some such? I know that Mercy ships converted a former Danish ferry for use as the Africa Mercy, but would it be feasible to do so with something like these, or any other, ferries?

You could, but you'd run into the same problems as the USNS have with their hospital ships, too much draught to go where she's needed.
Africa Mercy herself has, if memory serves, slighly less draught than Port of Bilbao and she's limited to the largest harbours in Africa. If she goes anywhere else she has to anchor, which greatly reduces her usefulnes.
