World War 2 era Aircraft Carrier Cold War Modernization
This kinda explains its self, but a WW2 era carrier modernized during the Cold War era to have new toys.
Take the Essex modernizations as an example.

The "Super" Soldierbucket challenge.
Your mission: draw a superhero , an individual (Superman, Wonderwoman, Spiderman...) or a squad of them (the Teen Titans, the Avengers, the Thunderbirds...), or perhaps the same but on the other side of justice, in soldierbucket scale. The idea is to have a lot of creative freedom in this challenge, the character(s) should only have something making them super to qualify: superpowers, supergadgets, perhaps even a supervehicle like Knightrider or Supercopter...

So we've had one official system challenge (Typhon) and two unofficial ones (Mk.13 GMLS and Mk.26 GMLS).
But we could have more.
In my opinion the Typhon challenge was difficult to implement because of how much the system impacts the ship, regardless if you used AN/SPG-59 or not. But keeping the requirements lose as long as one system is used, launcher or fire control or radar, seems the way to go.
One example that could be implemented would be a PAAMS/Sea Viper challenge, where you'd be asked to fit a ship with an S1850M (or perhaps a SMART-L), either a SAMPSON or EMPAR, and a SYLVER VLS module or modules, though i'd be tempted to allow for Mk.41 usage too.
Though we've only had AA systems so far so here's more ideas:
Fit a ship, new or refitted, with DASH and an appropriate sonar to direct it (SQS-26? -23 might be enough)
Fit a Sikorsky SH-3 Sea King or export variant to an ASW ship and add a beartrap to operate it in bad weather. A Sea King has a LOT of ship impact so its not as easy as it sounds. This could work for redfor ships too if the country joined NATO recently.
Fit an 8"/55 Mark 71 gun on any ship! With guided shells of course.
This could be applied to ground vehicles too, for example a MLRS challenge, to put a MLRS on any chassis.

Here's an obvious one that is criminal we haven't done yet. Armored cruiser challenge. Draw an armored warship of a cruiser type laid down between 1890-1910.

That seems like a good idea, or how about a protected cruiser challenge? Something along the lines of either the Atlanta Baltimore or Chicago?
