I don't care for Zombies, but here is my two cents:

Why would you want 1000 people on board? No, no, no. Get 100-120 people that you like or want on your ship and convert the rest to storage for MORE food and supplies, and then do some creative modifying and convert the cabins into master suites. Add a theater, a pool, a bowling alley and a shooting range with animatronic zombies (for practice) and you're set!

Sounds to me like you'd need something capable of launching a decently sized cargo shell. Airbursting fragmentation rounds to immobilize the Zombies and a combination incendiaries and fuel-air explosives to finish them off. (If a pipe through the brain is enough to kill one then presumably turning the whole thing to mush via overpressure is going to work as well.)

There are multiple reasons. More people means you can do more things at once, or do things in more areas at once. It also means you don't have as large of a risk at yet another genetic bottleneck (Humans have less genetic diversity across the entire population than any other primate, much less any other globally distributed species).

If the chicken I mistakenly left in the refrigerator while on vacation last week is any indication, basically all you need is something that will float for a month or so and can hold the worlds supply of 409 for the slurry cleanup thereafter.

Then the quesiton is what would your survivor compitition survival ship look like...

All you will need is a Mk1 female with lot and lots of ammo preferable hollow point to kill them with one shot each.
Or the ToG II landship for when you have to take your stateroom with you.

I think you should have ferries, littoral combat ships, and sail boats (for preserving fuel). Some coastal forces may be small and expensive so it's gonna be rough for survivors waiting for help on the coast and I think the sail boats will be used to go to the beaches and ports etc. Good idea for this though. To top it all, you need:

1: Littoral combat ships for escorting the ferries.
2: Boat and vehicle ferries for carrying the cargo, passengers, vehicles, and the sail boats.
3: Sail boats for dispatching forces to the coast.

I'd think a cross between a tarawa and a kiev would be a useful headquarters ship. You've got guns (could be updraded) for any sort of bombardment, helicopter support, pretty large flight deck, might be able to launch small cargo planes. If given a well deck it could launch small boats and amphibious tanks and whatnot for clearing the beaches well enough. I'd think a kiev sized and inspired ship with nuclear power, no missiles, but larger guns (american 5 or 8 in), a well deck, and self sustainable conditions, with a small compliment of multi-role helos and cargo planes, I'd think all that would be ideal. And it would be even better if an offshore oil station was secured. Or we can go full world war z and use a nuclear ballistic missile submarine. Imagine how long you could survive in a typhoon or ohio during all this
